Tamarind-Panna-Concentrate (TPC) is a convenient, ready to use concentrate for making a cool, refreshing beverage specially in summer season. Tamarind Panna also known as Imli Panna is a tangy, sweet & sour refreshing summer cooler made using tamarind pulp, sweetened with sugar and seasoned with few spices. The drink is healthy, absolutely delicious & very refreshing. Tamarind is found to boost immunity by keeping the liver & heart disease free.
Tamarind is without fat & rich in fiber. Studies suggest that daily tamarind consumption might actually help in weight reduction due to its flavonoids. Tamarind is a rich source of magnesium, potassium, iron, vitamin B and provides other essential amino acids, antioxidants and vitamin C to the body. It is great for digestion and when combined with sugar & cumin, it acts as a natural coolant in summers.
The objective of making TPC is to create a stable intermediate which can be easily stored in glass bottles or plastic pouches of different sizes & can be to easily converted to delicious Tamarind Panna on demand. Besides Tamarind Panna, this TPC can also be used for making Sambhar, Curries, Chutney, Sauce, Jam, Jelly & Icecreams.
The idea of making TPC from tamarinds or tamarind pulp is an approach to utilize more of our produce ( Tamarinds) & also it is an effort to increase the shelf-life of product. The outcome of this study is the development of a stable, nutrient rich, multiuse concentrate which requires no preservatives.

- Innovation of TPC is the creation of a stable & multiuse intermediate product which will help in increasing the utilization, production and consumption of the Tamarind, an indigenous & and underutilized fruit.
- Tamarind Panna is a good alternate of popular zero calorie drink in the market.

- The concentrate is multi-usable ie. besides being used for Tamarind Panna, it can be used for the preparation of various other products such as Sambhar, Curries, Chutney, Sauce, Jam, Jelly & Ice-cream.

- Procurement of raw material: For the preparation of Tamarind Panna Concentrate (TPC), Good quality tamarind pulp (blocks without seeds, preferably), having reddish brown colour, was purchased from the local market. Sugar, salt, mint leaves, chillies, lemons, herbs and spices were procured from local market and stored in airtight boxes.
- Methodology: Tamarind was soaked in water (1:2) for 2-3 hours, followed by cooking to extract the pulp. The pulp was mixed with sugar and salt as per the recipe and cooked till 50 percent concentration. The mix is added with mint, chilli extract & a spice mix (black pepper, fennel & cumin) and concentrated further. Towards the end (~68°brix) , mix was added with lemon and herb extract followed by pasteurization at 72°C for 15 sec. The hot concentrate is filled in sterilized glass bottles & kept under cool & dry place.

- Sensory Analysis
Sensory analysis of Tamarind Panna was done by the group of semi-trained panelists consisting of faculty & students of College using 5 point hedonic scale. Tamarind Panna prepared by mixing TPC & water/soda in the ratio of (1:5), showed very promising results. Appearance, texture, odour and taste were rated very good and OAA was found between very good and excellent.
- Shelf-life Study
TPC was packaged in sterilized glass bottles & stored under ambient condition. The product was analyzed for the change in critical chemical parameters (Total soluble solids & percent acidity) & sensory characteristics (appearance, colour, flavour, texure & overall acceptability) after an interval of 7 days. The results obtained are mentioned below. The shelf-life study of TPC is undergoing, however the expected life of the concentrate is approximately 1 year on account of its ingredients & technology involved. However, the concentrate can be made without preservative also.

There is a need of shelf stable tamarind by-products in market. TPC is ready to use concentrate for making a cool, refreshing beverage specially in summer season for all age group. It offers convenience to consumer by saving time on preparation and processing.
